   We too have the nesting pots by Cuisinart in the pod permanently and love them.  Depending on the length of the trip and the menu planner for, we may also bring a Thermo-pot (a stockpot that fits into its own thermos sleeve so that is behaves like an off-grid crockpot) or even a cast iron pot.
For dishes, we have a set of nice melamineware dinner plates, salad plate and bowls as well as a large stack of Chinet paper plates and 4 rattan plate supports. We also have real (cheap Ikea) utensils and a stack of disposables.  

We have a 152 and the nesting pot set goes on the top shelf under the stove, along with a Camco mini dish pan and Camco mini dish drainer.  Both these fit perfectly into the pod sink and are useful for just carrying things in and out of the pod and for containing any spills during transit.

Depending on the camp ground facilities and depending on our mood, we have the option of using real plates or paper plates :)

If you prefer using large 11" dinner plates, try looking at soft-sided coolers to store them in. The padded coolers for pyrex baking dishes are long and flat and can be easily stored in the area above the microwave.

	We were also frustrated that 9" plates wouldn't fit in the upper cabinet. We found oval-shaped plates at Walmart last week. They're pretty thin, but they're light and reusable and came with a nice-sized small bowl. They can be microwaved and they fit really well in the cabinet over the sink.

	We also have some of those very thin plastic oval plates. Seem to work fine and don't have to worry about them breaking. I would also suggest getting a plastic bin that fits inside of the sink. We fill it with soapy water, wash the dishes and use the sink to rinse them in. We store the bin inside the sink while traveling. Makes it easier to wash and rinse. Safe Travels.

	Thanks for all these suggestions. I have taken a lot of your advice -- ordered a set of nesting pots (the Cuisinart ones aren't available any more but I got some on Amazon - Magma brand), found some rectangular corelle dishes at Walmart that just fit in the cabinet and will also carry paper plates. I like the idea of the small basin to fit in the sink -- I will look for one. Thanks again.

	I second a removable wash basin which fits inside the sink. I got a rubber one with big handles at Ikea. Good for dish washing on normal trips, and for winter trips I've used it to catch all of my water (hand washing and tooth brushing) so I can chuck it in the bushes.

	We too use a plastic basin, put than I had to find a stainless steel sink to put it in.
