You can do it at home, but it will be easier with two people.  The hardest part of installing a RV A/C is cutting the hole and running the wiring, but that is already done.

Does anyone have any experience with what is involved or how hard it is to swap in a Coleman-Mach 8 Cub AC (or any brand for that matter) to replace the stock Demetic? Is it a home project or a professional dealer installation?

And since it would run a bit longer on each cycle it will pull more humidity from the air.  One of the downsides to using a 13.5k or 15k btu A/C in the pods is they cycle on/off too quickly.  Humidity is more important for comfort than actual air temperature.

If I were to replace our stock Dometic AC, it would probably be with the Coleman-Mach 8 Cub AC. It draws 1550 watts at 100 degrees Fahrenheit, and the startup draw doesn't seem to be too bad from reports I've read, especially with a good hard-start capacitor. A 2k generator would probably run it just fine, and heavens knows it would have to be much quieter than the 13.5k BTU Dometic.

I looked at that a long time ago.  Basically just a converted window air conditioner for way too much money.  See the thread below.  The specific post I linked to shows steps I took to make the factory A/C quieter, but if you go back to page 1 and read through you'll see a range of options I explored in place of the factory A/C.
