Is it ok to run your refrigerator or water heater on propane while you are on the road traveling?

No issues running your fridge on LPG while on the road, the larger RVs only have LPG as an option on the road (no DC mode). LPG mode uses very little propane and usually works the best so it is my preferred option unless we have an AC connection at a campground.
Remember you can't use the DC mode when boondocking (no connections) or you will kill you battery within a few hours. You must use LPG mode. As for the water heater, I would leave that off while on the road. It only takes 10 minutes to heat the water once you are in-camp.

And if the water is initially hot it will stay warm for hours and hours for use on the road. No need to run WH while driving. |

True. With our popup I always left the WH off all day after taking morning showers. We would still have very warm water to do dishes at night.
