Winter is starting to break, soon it will be mud season. Maple sugar season is starting and hopefully it will be time for podding soon!

Hopefully, it will be a good maple sugar season. We will be up in Vermont in July and will likely be picking up some more maple syrup. Anyway, got to get some good maple cremees also.Big smile

It should be, talked to someone today that runs a sugar operation and they said the sap is really running.
Don't forget the Maple sugar candies too!

Leo, the last year I made maple syrup was 2015, collected 700 gallons of sap and ended up with 16.5 gallons of syrup.  Hopefully it will last for awhile.  Did you get that warm snap about 4 weeks ago?  Here we had temps in the 60's and the lows were in the upper 40's, put a hurt on sap collection, as sugar content of the sap was down to only 1%, and with an extended warm spell, the sugar may have started turning to starch.  Fortunately it only lasted about 4 days but a lot of people around here got pretty nervous!

We didn't get that warm back then, the people I talked to said it was going to be a good year. My son and grand kids usually make a few gallons each year.
Shold be fun.

LOVE the real stuff (the candy too).  I have been known to take it with me to restaurants and pancake dinners since usually only the fake stuff is available there (or 50/50 fake/real).

I've considered trying my hand at making some from the red maples on my property, I don't have any sugar maples.  But I'm always so busy in March...

You could give it a try Doug.  I was surprised years ago when a friend of ours brought some clear syrup and told me to try it.  Had a faint taste and was very sweet.  When he told me what it was, I thought he was pulling my leg, but found out that it was for real . .. . . . . . . . . birch syrup!  A lot of work at the ratio was 60 gallons sap for 1 gallon of finished product!  Still prefer maple syrup, much more of a robust flavor!

BTW Doug, still looking for an updated picture.  The ones we saw last fall, from the rock wheel and all the other ones were great!

My son made some of the birch syrup last year, he did say it was double the work. Y gave a couple bottles to some of the people at the bait stands down at Cape Hatteras and they really liked it.
