Probably the only solution to meet your requirements is one or two of the Honda 2000 watt inverter-generators.  Anything bigger won't fit in the hatch.

I have two Honda generators....one of them is over 35 years old and still runs great!  Heavy thing though, they hadn't started using plastic then.  It weighs as much as some of the newer 2kW units but is only 600 watts!LOL
But I also have a Yamaha that has been excellent.
I consider them equal quality.

Will the Honda EU2000i fit into the storage hatch at all? I can barely lever a milk crate in there. I know the Honda is taller than that, I own one.

I don't think there is a geny on the market that will fit in any of the pod's outside hatches.

I thought it would fit in on its side, but you are right.  I just checked and while the height wouldn't be a problem the width is too big by a few inches.  It would fit through the front hatch of the under-bed storage and definitely if you lift the bed.  I didn't measure under the benches.

We store our Yamaha 2400iSHC inside the Pod when we're storing it. When we travel, we just put the genny in the back of our SUV, but you could just leave it in the Pod until you get where you're going. Anytime I have the genny outside, even if we're there, I chain it up with a heavy 3/8" chain and heavy duty lock.
