Is it normal for the water pump to cycle every so often when the faucets are off? I going to guess this happens once an hour. Maybe less often that that..

Sounds like a leak somewhere or losing pressure.

I accidentally left my water pump on all night and it didn't make a sound.

Yep- leak.   It could be leaking back through the check valve in the pump if there is a small amount of debris in it.

You might hear the pump cycle once or twice after water uses ceases. This is due to the hoses expanding and/or air being absorbed into the water under pressure. This is normal, most noted at night when things are quiet, but should not continue. A continuing cycling indicates a possible check valve leak as Budward mentions. However you should also check for real water leaks, including outside and under the Pod. Loose water fittings have been found.

I've heard mine cycle briefly once or twice in the middle of the night, I'm sure for the reasons Charlie mentioned (and possibly temperature changes).  If you are hearing it often, an area to check is the water heater overpressure valve, outside, at the top of the water heater.

How does a person check then check valve? I haven't seen any signs of water anywhere.

You wouldn't see water if it is a leaking check valve, it bleeds pressure off back into the supply side.
Do you use the water much?  If not I'd cycle a bunch water through it and see if it clears.  It might.
Or you might have to disassemble the pump and clean.
I don't think mine runs at all overnight.

If the overpressure valve on the water heater is failing, you'll see water leaking from it.

I normally have full hookups. My last trip I had to use the pump. Actually I think it was the first time I have really ever used it for any period of time.

I checked the last time I went out and had no problems with the pump cycling. It was either some trash in the valve or an air pocket somewhere.
