So at some point toward the end of the season the electric water heater got turned on with an empty tank and burned out. My question is how hard is it to replace, is it something I can do myself? How much should I expect the parts to cost? Or, should I just pay to have it replaced?

It is very simple, you can get the heater part at Lowe's, Home Deport etc. You need a large socket and have to disconnect the pilot pipe that goes infront of the heater  element. Really simple takes about 15-20 mins. The heater part was really cheap 10-12 dollars.

As Leo B says, its a very easy replacement.  The heater is plug-n-play.  I never thought of looking at Home Depot for the part... it'd be much cheaper (and more convenient) than an RV store Ouch

Just a quick update on this, the change out was as easy as advertised. Even a mechanical idiot like myself can do it in no time.
