OMG!! Nice fish Leo!!
I've been making sausage today, but got nuthin on you! Very impressed. Nice sunset too! You might want to try and make the pics a little smaller before you upload them, if you can. No problem, though - makes the fish look bigger than life-size! So how to you cook the reds? I like them blackened. Holding out one arm and hand...Did I ever tell you about the amazing one armed fisherman that caught one this long! fred

Unfortunately my idea of fishing is to go to the local market and point at one on ice. However, I am interested in what kind of sausage are you making. I have a large cast iron smoker and have recently tried my hand at sausage making. Got a grinder and haven't poisoned anyone yet. Safe Travels.

Don't want to derail Leo's fantastic fish thread, but... Just put a bunch of sausage in the freezer. I only make breakfast (country) sausage and traditional Italian sausage. Both start with a pork butt, usually about 8 lbs. Grind with Kitchen Aid meat grinder attachment. Usually, I just make sausage patties for breakfast and little balls of Italian which we use in lot's of different recipes. This time, I thought I'd try some casings and then (hot) smoke some of the breakfast sausage links. Well, that was a total fail. The stuffing attachment for the Kitchen Aid started turning my beautiful ground sausage into paste. I bailed on that quick until I can borrow or buy a good (LEM) stuffer. The fresh country (breakfast) sausage is so good, I'm not sure how much more the smoking will add. Anyway, here is the recipe I use: Traditional Italian (2 lbs.): 3 teaspoons salt 1 teaspoon fresh ground pepper 3 1/2 teaspoons toasted fennel seed - ground Country (2 lbs.): 2 teaspoons salt 2 teaspoons fresh ground pepper (or to taste) 1 1/2 teaspoon dried sage 1/2 teaspoon dried marjoram 1/4 teaspoon dried savory 1/8 teaspoon ground ginger 1 1/2 teaspoon dark brown sugar pinch of cloves 1/4 cup cold water I trim pork but, slice to 1 to 1/2 inch pieces, then spice, then let sit in fridge for a day before grinding. I use a 1/4 cup measuring scoop to measure out breakfast patties and Italian balls. Fun stuff! OK...Back to fishing!! fred |
