A hood is overkill on the pods, just use the bathroom fan, it will be just as effective.

I used almond laminate and glued it on with water base contact cement.

We installed a clear plexiglass backsplash that covered the entire wall over the sink/stove cabinet. We used standard mirror clips for the plexiglass. We used short screws(3/4") with a small dab of glue on the threads before we screwed them into place. they have held fine for 3 years and over 20,000 miles.
Can't help you with the exhaust fan . However, we did mount a small(8") electric fan that will help ventilate the area. We always have to remove the smoke detector battery while cooking. The only thing we miss in our 179 is an exhaust hood and a backsplash in the kitchen. Has anybody done one? If so, what method did you use to attach it to the walls?
