Brink back something along the lines of the G models that had a rear outdoor kitchen.

I tow with a Gladiator.   Tow rating is around 7000# but that little engine is better suited for under 5k.

I have searched and searched for any manufacturer floor plan that has:

<3000# Empty Weight
Ceiling height that allows a grown man to stand up.
Dry bath 
Outdoor kitchen (with a sink plumbed to a gray tank).

No one makes a floor plan like this anymore.  I had to go buy a old 183G to find these options.

When the weather cools even making coffee indoors warms up the rig. 
I love cooking inside.

With so many outdoor kitchens available that pack down for carting from camp to camp, we found the idea and marketing intriguing, but bought a 179 for all the interior space after dark or in the rain. Our outdoors kitchen has unlimited floor space!

My 2021 Rpod 171 came with a quick connect gas fitting. I can plug a gas grill or griddle into it for cooking outdoors. I also mounted a couple cleats on that side of the camper to hang my grill and a fold-up-work surface. I painted them black and mounted them on the black pinstripe so they blend in. Can’t see them unless you look for them.

First one up fires up the percolator then scurries back under the blankets. Fresh coffee and warmth drive us both out to greet the day!

Back to the OP's lament, I've seen plenty of tear drops with rear, outdoor kitchens and most of them seem new, so the manufacturers are out there. My wife and I are of the age where going outside to make coffee on a cold morning is a non-starter. It was fun when we were younger, but now we enjoy the comforts of coffee without grounds in it while relaxing on am 8" mattress.
