Scalloped Potatoes – serves 4-6

7 medium or 4 baking potatoes, peeled and sliced
salt and pepper
1 cup grated cheese
4 Tbsp (1/2 stick) butter or margarine
2 eggs
2 cups milk
¼ tsp nutmeg

Season potatoes with salt and pepper and place in cold Dutch oven in layers, alternating with cheese. Dot each layer with butter or margarine. Beat eggs into milk, add nutmeg. Pour over potatoes and dot with butter or margarine. Place lid on Dutch oven and cover with hot coals. Cook for about 1 hour or until potatoes are tender
