Author: rpodcamper.com
Subject: 907
Posted: 30 Nov 2009 at 4:29pm

Ilike to use the best cutsof meat, such as a sirloinroast, because there is no wasteand, in case there is any leftover, it can be used later inmany ways. One half package ofdry onion soup mix rubbed on themeat before it is cooked will beall the seasoning that isneeded. For a big roast -10 lbsor so- use a whole package. Adda cup of water to your Dutchoven and begin to cook yourroast with 8 charcoals on thebottom and 12 on the top. Besure and not let the oven cookdry. Add a little water asneeded .This is hotter than youwould cook biscuits but itworks. After about an hour, youwill need to add a few newcharcoals and now would be agood time to add a couple stalksof celery, two big onions andfill the rest of the oven withcarrots and potatoes in whatever proportions you like. Ifyou get the oven too full put apiece of foil over the top.Remember, if you cook thepotatoes too long they will bemushy. Continue to cookabout one more hour or until thepotatoes are done. You will havegained lots of juice by now andthat can be thickened with alittle flour or corn starch tomake gravy.

If you are in a place where youcan do it, the very best way tocook meat is to bury it in theground . To do this, youprepare your meat and vegetablesthe same way and dig a hole 2feet deep and 2 feet across. Fillthe hole with wood cut intosmall pieces and add the sameamount of wood above ground andthen burn the wood until it isreduced to red hot coals. Separate the coals and afterputting a piece of foil over theoven to help keep the dirt off, place the oven down in the coalsmaking sure to get some on allsides, underneath, and lots ontop. Cover the oven with thehandle straight up and addenough moist dirt tocompletely cover the fire. Ifyou can see any smoke, add more dirt. Itwill take about 6 hours for thisto cook. The good thingabout cooking this way is youcan dig this up in 6 or 8 hoursand it will be done to satisfyyour hungry party, without beingover cooked.
A turkey also works well to eithercook with charcoal or bury inthe ground .I just season theturkey with a little season-alltype salt and cook with 12 coalson top and 8 underneath. A 12 pound bird cooks in about 2hours. Buried in the ground, itreally doesn't matter what itweighs, a turkey will be done in4 or 5 hours.
