   <title>Fishing Report : Hope the weather is good......catching...</title>

We had them bite on finger mullets, shrimp and on chunk bait ( cut up spot). The 4 we all cruising along the shore and none were more that 20-25 feet off the beach. When cleaning them it looked like they were feeding on crabs and the silver side minnows.<div>Sad to leave just as the Blues were really starting to come in.</div><div>But now I have to head back home and start to get ready for ice fishing some big trout, walleye and salmon will be almost as much fun<img src="https://www.rpod-owners.com/smileys/smiley20.gif" border="0" alt="Thumbs Up" title="Thumbs Up" /></div><div><br></div>]]>

We headed north today. This was some of the best fishing ever!! Ended up with 4 red drum! That is my shanty on Lake Willoughby ( last winter) 74 in the shanty -10 outside. We catch some nice salm on,Lake trout, rainbow, perch and smelt .................and at Island Pond good size walleye!!!]]>

I only make breakfast (country) sausage and traditional Italian sausage. Both start with a pork butt, usually about 8 lbs. Grind with Kitchen Aid meat grinder attachment. Usually, I just make sausage patties for breakfast and little balls of Italian which we use in lot's of different recipes.</div></div><div><br></div><div>This time, I thought I'd try some casings and then (hot) smoke some of the breakfast sausage links. Well, that was a total fail. The stuffing attachment for the Kitchen Aid started turning my beautiful ground sausage into paste. I bailed on that quick until I can borrow or buy a good (LEM) stuffer. &nbsp;The fresh country (breakfast) sausage is so good, I'm not sure how much more the smoking will add. Anyway, here is the recipe I use:</div><div><br></div><div>Traditional Italian (2 lbs.):</div><div><br></div><div>3 teaspoons salt</div><div>1 teaspoon fresh ground pepper</div><div>3 1/2 teaspoons toasted fennel seed - ground</div><div><br></div><div>Country (2 lbs.):</div><div><br></div><div>2 teaspoons salt</div><div>2 teaspoons&nbsp;<span style="line-height: 1.4;">fresh ground pepper (or to&nbsp;</span>taste)</div><div>1 1/2 teaspoon dried sage</div><div>1/2&nbsp;<span style="line-height: 1.4;">teaspoon dried marjoram</span></div><div><span style="line-height: 1.4;">1/4&nbsp;</span><span style="line-height: 1.4;">teaspoon dried savory</span></div><div><span style="line-height: 1.4;">1/8&nbsp;</span><span style="line-height: 1.4;">teaspoon ground ginger</span></div><div><span style="line-height: 1.4;">1 1/2&nbsp;</span><span style="line-height: 1.4;">teaspoon dark brown sugar</span></div><div><span style="line-height: 1.4;">pinch of cloves</span></div><div><span style="line-height: 1.4;">1/4 cup cold water</span></div><div><span style="line-height: 1.4;"><br></span></div><div><span style="line-height: 1.4;">I trim pork but, slice to 1 to 1/2 inch pieces, then spice, then let sit in fridge for a day before grinding.
