Wow, that is some blog entry.  A bit slow to load with all of the pics and maps, but a good read and nice to see where you were going. 
 
A trick to make sure you are hooked up correctly, I've been doing this for years:  after you think the ball is seated and you've latched it, crank the tongue jack down a half-dozen turns (assuming it was still touching the ground) and watch the ball + hitch to see if the ball starts to pull out.  If I'm still not sure I'll even sit on the tow vehicle's bumper at this point and bounce on it a few times.  Then I'll lock the hitch and crank the jack all the way up for travel.
 
As for the water heater, now that the anode is back in place you can leave it there.  I don't drain my water heater all season until I winterize again, and when I do I use the low point drains and open the pressure safety valve to break the vacuum inside.  You should remove the anode every 2 years to check its condition (draining the tank in the process), but put it back in to prevent rust on the threads.

Here is a POD Check List that might help you on your next outing. You can customize it to fit your equipment and needs!

RPOD CHECK LIST

     ARRIVAL
find a good spot, line up door and power source
complete1st side to side level check
raise trailer/hitch w/ tongue jack & lower hitch
release coupler and then lock with coupler lock
raise trailer/place lynx pad and lower—complete 2nd side to side level check
disconnect chains & electric
level trailer w/ tongue jack (front to rear level)
set trailer stabilizers installing lynx pads; Re-check level
open propane line
test shore power with volt meter
install surge protector and lock
connect shore power to trailer
disinfect water supply with bleach solution, install pressure regulator and connect
slide steps out and door handrail
slide slide out--out
turn TV booster on
check all faucets by turning on/clearing lines of air
be sure hot water tank is filled & then turn on hot water heater (remove screens)
set refrigerator to correct power source
open bathroom vent

DEPARTURE
empty fresh water tank if needed
check that black & grey water caps are closed & secured
disconnect shore power & remove SURGE PROTECTOR; stow away
turn off hot water heater/replace screens
disconnect-stow water hoses, connectors, PRESSURE REGULATOR
turn off propane tank (put refrigerator on battery if desired)
close bathroom door & fan vent
turn TV booster off
shades down and locked
loose items stowed (black table especially)
place tongue weight on tongue jack
connect chains & electric (walk around lights check)
raise stabilizer jacks, stow lynx pads
un-chock wheels
check doors and locks
slide in steps & close door handle
CHECK CAMPSITE FOR ANY LEFT BEHIND ITEMS
