I didn't do it on hickory, ended up using mesquite. Glad I did. after smoking for a couple of hours, into the fridge to rest and cool and firm up over night. Then onto the slicer.. Feral cats and dogs, snakes, etc. Then other stuff released like Asian Carp and that fish that eats everything in Maryland.  AND the species the government imported to handle some problem then they found out it doesn't do that, like Tilapia and Nutria.  I remember when they put Tilapia in the irrigational canals in AZ to handle algae, ever try and bait a hook with algae?]]>

They have been found eating small deer. They are upsetting the balance of nature not being native to south Florida. A full size alligator is able to survive being attacked by a Python. And if gets very cold some pythons will die. Hunting seems to be the only way to control their population.]]>

    <![CDATA[<strong>Author:</strong> <a href="http://www.rpod-owners.com/member_profile.asp?PF=1146" rel="nofollow">jato</a><br /><strong>Subject:</strong> 11289<br /><strong>Posted:</strong> 24 Mar 2018 at 8:01am<br /><br />It has been amazing to see how the deer have made a comeback over the past years.&nbsp; We live on a strip of land that is between 1 - 2 miles wide and located between Lake Michigan and Torch Lake which is just over 19 miles in length.&nbsp; The deer are pretty much corralled by the lakes but have dramatically increased their numbers.&nbsp; Because of that deer/car accidents are quite common.&nbsp; Just yesterday I counted 6 kills along a 10 mile stretch.<br>On a happier note, I must agree, pretty hard to top elk meat, although venison is near the top as well.&nbsp; Also iguana is fantastic, had it a few years ago while in Crabwood Creek, Guyana, S.A.&nbsp; Had to wait a few days for the seller to procure 3 large, live iguanas.&nbsp; Chopped heads off, pretty much filet them like a fish, lots of currey and cooked over a large charcoal fire.&nbsp; Makes my mouth water just thinking about it.&nbsp; Don't think they are native to N.A. though so one would have to travel a way to experience this enjoyment to the palette.<br>]]>

Place them in a smoker at 225F until the bacon is happy. <br><br>Enjoy. After "pork belly burnt ends" my favorite finger food for a group...<br>]]>
