I own a 2015 model 179, yesterday de-winterized, after what seemed like a normal clean out of all anti-freeze, I went to clean out my hot water tank and there was a huge amount of pressure build up. In fact, all the water left over in all the pipes and fresh water tank reserve emptied out from the heater.
Is that normal, or did I incorrectly 're-route' my water inlet from the pump?
Any assist or input would be of great help.

Did you or someone else 'winterize' your 179 last year?  It is a good idea to ALWAYS open the pressure relief valve before opening your HW drain plug to avoid what happened to you.  Your 3 valves should be as follows: top and bottom - open - handle should run parallel with the pipe while the valve in between should be closed - perpendicular to the pipe.  Possibly the water 'in' line was a touch open when you were de-winterizing, thus building up pressure in the tank. 

Since fall of 2012 I have always used compressed air to winterize.  Takes only a couple minutes and I only use 1 pt. of rv antifreeze for the 3 traps.

Thank you for your input - I did it myself, thinking back to this weekend one thing I may have done without realizing is that I closed the relief valve...so, I'm going to get out my manual, take a good look at the instructions, check out some more videos, follow up what you wrote, then I think I'll have a good idea at the 'fix'.
