We have had our 179 for two years. While on about two dozen camping trips, we have never used the stove. We built a chuckbox that serves as an outdoor kitchen. We find the current sink to be a bit too small. My wife has suggested that we remove the counter and reconfigure the kitchen so that the sink is where the stove currently resides. To the right of the sink there would be nothing but counter all the way to the wall next to the refrigerator. The new counter top could either be a thin butcherblock or Corian. Corian would allow us to integrate the sink and the counter in one piece.

I've looked under the counter, and it seems that the cabinet modifications and the plumbing would be fairly minor. Has anyone either done a similar mod or moved a sink in a trailer? Aside from the possible ramification in resale value, can anyone think of a reason why this is a bad idea?

We did not move the sink, but we did change it out for a larger one. we added a much better faucet also. Later, I made a cutting board cover for the stove. You can see these mods by following the link in my signature.

If you have never used the stove in 2 years, it's safe to say you probably never will. Removing it certainly makes sense and it would not be all that difficult to do. Personally, I would remove the stove but keep the sink where it is (install a bigger one if desired). We cook a lot and therefore have dirty dishes. I like to have space on both sides of the sink. Dirty dishes on one side, clean ones draining on the other. At any rate, your mod sounds perfectly feasible.

This is probably the best (future proof) answer. That way, in the future, if you choose to sell, the new owners might want an indoor cooktop. Another answer might be to get the kit that recess mounts the current cooktop, allowing that area to be a better work area. But a bigger or different sink is easy peasy.
