Someone here suggested using colored gels, the type used for stage lighting.

The gel sheets just dim them, and aren't permanent. Some owners have frosted the inside with paint.

There must be some way to diffuse (soften) the light. What is the spacing like between the cover and the led array? Anyone?

Someone suggested sand blasting the inside of the lens to hays it out, I thought that was interesting and I might try that at some point.

I use these since they are heat resistant (low heat), and work well with my LED lights.
We use the red for the main lights when we are out on Astronomical Star Parties, and the frost for the other lights. There are many other online vendors and many other combinations of colors. Much cheaper fix than replacing bulbs or fixtures.

If you do a search on Amazon, you can find dimmable LED lights.  You have to replace the entire unit, not just the bulbs....here's one:
