Thanks for the compliments John. Mods and trip planning are a lot of the fun of owning a RV. At least for me.
We are new RV owners also. Bought ours in the fall of 2014. Did a couple or three 300 mile shakedown trips and then took off cross country. Really not much different between 300 and 3000 miles 'cept time and more fun stops. 
There is sooo much to see and experience when crossing country we never really felt bored; especially when we left the highway for a closer look at America. http://www.roadsideamerica.com - Roadside America is a great website and App.

Lunch at River’s Edge Restaurant in La Push, Washington offered some memorable views
The museaum at Three Forks, Montana was interesting. A bit creepy, but interesting!
Having lived up the road from Miami for 25 years, how odd it was to run into the Spruce Goose and hundreds of other aircraft at the Evergreen Aviation & Space Museum in McMinnville, Oregon!
Just remember: It's not just the destination; it's the journey too! There are soooo many places *off* the highway that are worth absorbing.
OK, the genny. On this trip, we used it less that three hours total over 26 days. We carry it in the back of our TV and notice no fumes whatsoever. Still running on same tank of gas I filled this past June, so I really can't comment on storing extra gas, although I do have a virgin 2 gallon container.
Fridge is super simple for us. We just run it off propane 24/7 unless we're on shore power which is rare. We keep an analog thermometer in it and have had no problem in either freezer or fridge. We must just be lucky.
BTW, most of what I have learned about this RV thing has been right here. Lots of folks with a lot more experience than me have inspired and encouraged me. It's been great fun...as it should be.
