I'm picking up a 2021 192 and want to get the correct draw bar for my hitch. My GMC Sierra sags 2.5" with 550 pounds on the rear bumper. Can anyone tell me the correct height my hitch ball should be for level towing?

Good day, HH! Good question to ask, about the 192 hitch height. We are also awaiting our 192's arrival.
From what I have read in other posts re the 190 series is that the hitch on the trailer sits level at about 20 inches off the ground (keep in mind this is an estimate!). You want your trailer to be hitch downwards about 1 inch from level (so 19" from ground). This, along with your apprx tongue target weight of 11-12% of your trailers weight, should reduce the likelihood of trailer sway. (Plenty of good threads here regarding proper loading, tongue weight info/discussions).
So now that you have an estimate of where the trailer should sit, you need to measure how high your truck hitch sits fully loaded, w/full tank of gas and passengers.
Say your truck hitch height (the measurement to the top of your receiver) is also 20". You can do the math...you want to begin with a hitch with a 1 1/2" rise (from the top of the receiver), so that once the trailers full weight is on the truck, the trailer hitch should sit about 1" low (the nose of the trailer slightly lower than the rear of the trailer).
I would now suggest that an adjustable hitch would be a prudent purchase as it allows you to adjust the height according to your towing needs.

It covers this method, shows how to move the hitch vertically to achieve optimal height adjustment while showing how to install their hitch.
Full disclosure, I just bought an Andersen wdh as it seems to be the one that should suit our needs the best. There are many good choices and others here also support no wdh as they control sway via trailer loading, hitch weight and often using a (friction) anti-sway bar.
