Simple question: Is "colder" to the left or to the right on this unmarked user interface?

Left to right , right is the coldest.

I know huh...seems like the lesser, shorter bars would be colder but NOPE. 

The taller bars, and the more of them, the colder your fridge will be.

3 or 4 bars is about right for mine, if I set it for 5 bars it seems like the thing just burns the flame constantly and the temp inside does not really seem to be much colder. 

Set it for 3 bars and give it 10-12 hours or so and then check it. BTW opening the door every half hour or so to check it will reduce the ability for the fridge to stay cold, especially on warm days.

Think of it as "more bars = more cold".

I just got one of these a couple months ago.  Quite a different setup from the Dometic we had in our 2011 177, but the temp control would be the same in that there were 1 - 5 red dots about 1/8" diameter that would light up.  More dots equaled colder temperature.

Get an indoor/outdoor thermometer. Put the sender for the outdoor part inside the refrigerator. That way you can monitor the temperature inside without having to open the door. It works quite well.

Anything above 3 or 4  big bars freezes lettuce, provided the back of the fridge is on the shady side of the trailer.  If it is in the sun, every thing is 'luke".

Also, by moving the bi-metal switch closer to the top of the chimney stack the two muffins fans will activate sooner, resulting in lower interior temperatures.
