Almost Pumpkin Pie – serves 12

Filling:

1 – 29 oz can pumpkin
(not pumpkin pie filling)
1 Tbsp pumpkin pie spice
3 eggs
1 cup sugar
½ tsp salt
1 tsp vanilla
1 cup evaporated milk

Topping:

1 package yellow cake mix
1 cup chopped pecans
1 cup butter
Optional - Whipped topping or ice cream

Mix together all filling ingredients. Pour into greased 12” Dutch oven. Cut butter into cake mix, stir in nuts, and sprinkle over top. Bake for 1 hour with 8 charcoal briquettes on the bottom and 16 on top. Be careful to have bottom briquettes evenly spaced without a coal directly in the middle and the top briquettes touching each other along the outer edge or lip of the lid. When done, may be served with whipped cream or ice cream. May also be served cold.

Sounds yummy! If only I could get my hands on some pumpkin! Even my dog is missing out as pumpkin is a large part of her mostly raw diet. Hope the shortage is over soon. I will stock up and give your recipe a try.
