I think that is a good trip checklist. I would think you were ready to tow when you picked up your TT from the seller. Your TV was capable and safe, the safety aids were functioning, the TV and TT were ready to tow and checked (tire pressure, weight distribution, etc.) I see trailer towing malfunctions daily or accidents looking for a place to happen everyday. Not so much with RVers, primarily with cargo trailers and workers. Stuff like a pallet of cement bags on the aft end of a 16' trailer.

My little peeve is always watching the tire temp and hub temp while towing. I check it regularly with a hand held infrared temp sensor. I know I have right tire pressure. Blow outs are bad for a two wheel travel trailer and the number one cause of RV fires is overheated hub bearings. As you travel you will get used to what is normal, it is not a constant, but changes with roads and weather.

I made a hook up check list that I keep in the center console of my truck.  It's mostly based on the stupid things I did or failed to do.  I use it "religiously" when hooking up and getting ready to hit the road.  It just takes a minute, but is really saves me from forgetting things when I'm distracted by a million (well not really a million but a lot) of distractions.  

I also carry a torque wrench and a little air compressor for the tires.  The idea of losing a wheel or burning up a tire from low pressure gives me the creeps.

Agree with Fred...sometimes the most obvious things are easily overlooked because you think that there is no way in the world you could ever forgot that particular thing....I have forgotten to do those very things.  I have a checklist for trailer hook-up and trailer prep (interior and exterior) for towing that I go through before it moves.
