I live around 5000 ft elevation.  Does anyone know if i need to make some adjustment for the water heater pilot light since I probably will be camping at a higher elevation than that? I'm trying to get it all set up right and thought I read something about that.

I was camping at over 9000 feet and in RMNP last September and had no issues.  The water heater too, by the way, has electronic ignition like the furnace and the refrigerator.  There are no pilot flames to light or that stay lit in the pod.

Agree, we have been to RMNP (9000 ft) and other high elevations throughout the Rocky Mountains and have never experienced any problems with our HW, furnace, or refrigerator because of electronic ignition.  No worries, go podding and enjoy the great outdoors.

Your water heater doesn't have a pilot light.

Boom.
