Here's a quick and easy clean up meal:  Chicken dinner in foil.

This is a recipe for 4, but it is really easy to make for less.

4-boneless/skinless chicken breasts
Salt and pepper
1-Package dry chicken gravy mix or 1 envelope onion or chicken soup mix
Any frozen vegetable of your choice
1-1 1/2 cup frozen french fries or tator tots

Preheat oven or grill to 400 degrees (we have cooked these on a small gas grill/you may want to wrap in double foil).  Place chicken on separate sheets of foil (I use non-stick).  Sprinkle chicken on both sides with salt and pepper.  Sprinkle each with 2 tsps dry gravy mix (or soup mix).  Place approximately 1/3 cup frozen vegetable and 7-8 potatoes with chicken.  Seal packets.  Place on baking sheet (I have also just placed them directly on the rakes).  Bake 45-60 minutes or until chicken is tender.  You can save yourself clean up just by eating right out of the tin foil.

That sounds good and healthy too.  Don & I have to start watching our calorie intake when we start camping again in the spring.  Camping was sure fattening for us.  We love our brats, burgers and steaks cooked over the fire.  We'll still indulge, but need to limit quantity.

It works with pork chops too.  We cook our vegies in tin foil most of the time.  Cut potatoes in small pieces, add a small amount of butter, and throw on the fire or grill.  Frozen vegies are easy too and they taste so good.  Clean up is sooooo easy.
