Camping, then boating, now camping again.

My wife and I had camped quite a bit in a pop up while the kids were growing up, then got into boating for about 15 years. About four years ago got out of boating and started tent camping. While at a campground near the Finger Lakes of New York, we saw our first Rpod. Our neighbors took us on a tour, and we loved it. Big enough for just the two of us and small enough for my older GMC Sonoma to pull. When we got home, started looking around and found a private seller with a 2015 179. That was last October. We live in South Jersey. Our first real trip was to Charleston, South Carolina in December, and now we just got back from a week near Nashville. Overall, we are very happy with it, but we are having an issue with the AC staying on. Although there are times it will run as it should for as long as we need it on, there are other times when it just shuts off - fan and compressor, regardless of the fan setting (auto, low, high). If I shut it off, wait a few minutes and turn it back on, it's fine- until next time.  Any suggestions or ideas are welcome and would certainly be appreciated.
