1 large egg white
9-10oz icing sugar
1 drop flavouring of choice (optional)

1) beat egg white and add sugar
2) add flavouring (optional)
2) mix until it becomes a paste/dough
3) separate into 2 small pieces and roll each into a ball.
4) put the ball on a microwave safe plate and microwave for 1 min 50 - 2 mins depending on the strength of your microwave
5) The meringue will have puffed up.  Let it sit in the microwave with the door closed for 2 mins after wards to allow it to come down to temperature slowly and the crust to harden.  * Opening the door too quickly after the cooking process will cause the meringue to deflate into a hard pancake.

6) Once the meringue has cooled, it can be sliced open for fillings to make a Pavlova.

The remaining egg yolk can be used to make a lemon curd to saved for a hollandaise.
