If you had a way to tilt the tailgate and hold it so it does not hit the power jack, you could probably run the generator from the truck bed. It would just deflect the exhaust upward. You might need to add some form of heat insulation to the tailgate though.

I wouldn't recommend starting up any generator into a significant load. It's not unsafe, just hard on the generator to load it before the oil gets a chance to warm up and lubricate everything properly. Same reason why its a bad idea to do full throttle acceleration  in your car before you get it up to operating temp. 

Better to check that your major 120Vac loads (microwave and air conditioner) are off first, then hit the remote start.  Then give the genny a couple of minutes to warm up before loading it up. Running the converter during warmup is fine, that's only going to be a few hundred watts
